Soft and Chewy CHocolate Chip Cookie Recipe

Out of all the fancy cookies we have tried baking at home, purchasing from the grocery store, and buying in bakeries, my son’s favorite cookie and first choice is always Soft And Chewy Chocolate Chip Cookies, and to Carter and my husband Brian, the most perfect cookies have just a slight crunch around the edge with a super soft center.

We have tested and tweaked our Chocolate Chip Cookie Recipe repeatedly to get it just right. The cookies need to be thick not flat, soft not hard, and they must be chewy not crunchy, without still being doughy — and I think we finally have the final cookie recipe we’re going to stick with.

We’ve been so busy lately and I haven’t done a “major” grocery run in a while. The kids have been busy on the weekends and I hate going grocery shopping alone, so I’ve been super lazy about cooking, opting for quick easy meals or just pantry scrounging. Honestly, we’re on an English Muffin Pizza kick right now and it’s pure heaven, but that also means I’ve been neglecting the recipe section of the blog a bit… and it’s time for cookies and sweets!

Bring On The Cookies

Yesterday I grabbed Natalie after school and hit the grocery store for some more English Muffins, butter, and chocolate chips so I could make pizzas and the kids could bake cookies. I seriously love that they’re both old enough now to bake complete recipes on their own and even put the dough balls on the cookie sheets. Even better, they each choose a different cookie recipe and we got two made at the same time. They don’t know it yet, but they are going to be doing most of the Christmas baking too!

Carter nailed these Soft And Chewy Chocolate Chip Cookies.

They are so, so good. We ate way too many cookies and way too much cookie dough!

Now Brian was a little skeptical about the early, right out of the oven “soft and chewy” claims, saying, “We’ll just see how they are when completely cooled.” And late last night the verdict was in. After cooling completely, the Chocolate Chip Cookies were still soft and chewy.

This is our new favorite Chocolate Chip Cookie recipe! We’ll definitely be making these cookies over and over again.

Soft and Chewy CHocolate Chip Cookie Recipe

Ingredients

  • 1/2 cup granulated sugar
  • 1 cup brown sugar, packed
  • 1 cup salted butter, softened
  • 2 large eggs
  • 2 tsp. vanilla extract
  • 2 1/2 cups flour
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 12 oz. chocolate chips

Instructions

  1. Preheat oven to 300 degrees.
  2. In a large bowl, combine sugars, butter, eggs, and vanilla. Blend on medium speed until a grainy paste is formed. Be careful not to overmix.
  3. Add flour, baking soda, and salt, mix until just blended. Mix in chocolate chips.
  4. Place doughballs, the size of rounded tablespoons, about 1.5 inches apart on a baking sheet. Bake 18 minutes or until the edges begin turning golden brown. Transfer immediately to cooling racks.

Notes:

Makes about 4 dozen small cookies. We prefer mini chocolate chips in this recipe and often double it because they disappear so quickly!
