When you’re juggling client deadlines, phone calls, meetings, walking one kid to school, driving another across town to school, and actually getting a workout and a shower, mornings can be kind of hectic. When mornings get crazy, what falls through the cracks? Breakfast. It’s all too easy to skip breakfast or eat something crappy on the road… but your body needs breakfast. It needs fuel to keep you going and to keep your internal systems working properly.

I admit it. I used to skip breakfast all the time. But once I started cooking breakfast, using dinner leftovers and prepping/chopping vegetables in advance, I realized how fast it really is. We go from, “Ready for breakfast?” to “Ready to eat.” in 10 minutes or less — and everyone has 10 minutes.

One of the Breakfast Scrambles I have been loving lately is this Kale And Balsamic Chicken Sausage Breakfast Scramble. We’ve made it several times now and I really love the flavor.

The secret is the O Organics brand Kale And Balsamic Chicken Sausages. They’re Whole30 compliant sausages AND they’re Brian compliant sausages. Brian eats no red meat or pork at all, ever. Never. No cheats. Not even sometimes. And that includes chicken or turkey sausages that have pork casings — even if I remove the casings — which eliminates almost all chicken and turkey sausages. This can make things tough.

Before Whole30, we just went with vegetarian sausages or bought turkey sausage patties. But with Whole30, we can’t eat any grains and the brands we were buying all have grains. While there are a few other chicken sausage flavors that are Brian compliant, like O Organics Mushroom And Asiago Organic Chicken Sausage and O Organics Spinach And Feta Organic Chicken Sausage, Whole30 also means no dairy, so these flavors are out.

Making the Kale And Balsamic Chicken Sausage Breakfast Scramble is quick and easy.

First, Cube the potatoes and place in the microwave to cook on the “potato setting.” Then chop the onion, bell pepper, spinach, and tomato, and slice the sausages. Sauté vegetables in olive oil and add potatoes when done cooking. When the potatoes and onions begin to brown, add the Kale And Balsamic Chicken Sausage and sauté until the sausage begins to brown. Add the eggs, spinach, salt, and pepper. Scramble and serve immediately.

Ingredients

  • 2 cups small potatoes, cubed
  • O Organics Kale And Balsamic Organic Chicken Sausage (2 links)
  • 4 eggs
  • 1/2 large red bell pepper, chopped
  • 1/3 white onion, chopped
  • 1 tomato, chopped
  • 1 large handful spinach leaves, chopped
  • Sea salt and black pepper to taste

Instructions

  1. Cube potatoes and place in the microwave to cook on the "potato setting." Chop onion, bell pepper, spinach, and tomato. Slice sausages.
