I don’t know about you, but for a long time, whenever someone mentioned roasted carrots, all I thought of was carrots cooked in butter and covered in brown sugar… or sometimes I thought of gross, mushy cooked carrots that tasted awful. I wasn’t a fan of steamed, soggy carrots, but I didn’t mind the dessert-like carrots served sometimes on Thanksgiving and Christmas.

The problem is that vegetables are supposed to be good for you and covering them in butter and brown sugar sort of cancels all the healthy part of the food out.

So I basically never made cooked carrots. I ate them sometimes at restaurants — Seasons 52 makes awesome roasted carrots — but overall, I stuck to eating them cold, dipped in ranch, which isn’t much better. Then when I developed my lactose allergy and ranch become “death sauce”, carrots sort of lost their appeal and I only ate them in smoothies.

Not that long ago, I made Maple Sriracha Roasted Cauliflower for dinner. I also roasted broccoli in the oven to test a Vegan Cheddar Cheese Sauce recipe. The oven roasted cauliflower and broccoli tasted amazing and it got me thinking… Couldn’t I roast carrots too?

Starting Whole30 was the perfect kick in the pants I needed to try some of the ideas I’ve had for cooking vegetables, like my Asparagus And Mixed Veggie Breakfast Scramble, Garlic And Thyme Cauliflower Mash, and these Garlic And Thyme Roasted Baby Carrots. This recipe is so easy and so delicious that I am mad that we didn’t make this sooner.

First, dump a bag of baby carrots in a large bowl, drizzle the carrots with some olive oil, add onion powder, sea salt, garlic powder, and thyme, and then toss the carrots until coated in the seasonings.

Second, arrange the carrots in a single layer on a baking sheet lined with parchment paper and bake them in the oven for about 20 minutes at 400 degrees.

Third, put as many on your plate as you can before anyone else tastes them. Because they’re amazing, everyone will want them, and you’ll wish you had made more.

I’m serious. I devoured these babies.

  • 1 bag baby carrots
  • 2 tbsp olive oil
  • 1 1/2 tsp garlic power
  • 1 1/2 tsp onion powder
  • 2 tsp thyme
  • 1/2 tsp sea salt

Instructions

  1. Preheat oven to 400 degrees.
  2. Dump a bag of baby carrots in a large bowl and drizzle carrots with olive oil. Add onion powder, sea salt, garlic powder, and thyme, and toss until coated evenly.
  3. Arrange carrots in a single layer on a baking sheet lined with parchment paper and bake for 20 minutes. Serve immediately.
